MOMS CAKE – BACK TO OLD MEMORIES

I am going to share a recipe from my mother’s book which is so close to my heart. I have never tasted anything like this before – A cake that is made with  mothers ‘s unconditional love

Every bite of this cake takes me back to those beautiful days … spent with family and friends. During our college days , We used to wait for her to send us some and she used to send them in batches so none of us our left out  😀

Recently ,  as I succeeded in baking , I decided to make this ,  it turned out good but not as good as my mothers ( she says her secret ingredient is love- yea off course ! nothing can be greater than a mother’s love )

Mom's Cake

Ingredients 

Butter                    : 400 g ( room temperature )

Milk                        : 1 cup

Sugar                      :  2 cups  (keep 3 tbsp separate for caramelizing )

Cinnamon               : 1 big piece /stick

Cardamon              : 5 -10

Flour                        : 2 cups

Baking powder       : 3/4 tsp

Salt                           : 1/2 tsp

Vanilla                      : 1 tbsp

Egg                           : 5

Secret ingredient   : Love

Method

  1. Preheat oven to 170°C. Grease and lightly flour a 10 inch cake pan.
  2.  In a large bowl beat butter , sugar , salt and vanilla until creamy, Add eggs (1  or 2 at a time ) and beat well.
  3. Caramelize sugar (refer notes below ) and pour it into the batter.
  4. Once done , beat in milk and flour ( sift flour) followed by baking powder , ground cinnamon and cardamom.
  5. Spoon into a pan and smooth surface. Bake  for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Mom's Cake

*Notes  to Caramelize sugar

Heat a small deep pan and add 3 tbsp of sugar with 2 tsp pf water. Melt the sugar to a caramel color and pour it into the batter.

 

Don’t forget to add loads and loads of love !

You can either eat it hot or cold … we usually start of with licking of the batter to scarping out the edges from cake pan.
